Really enjoyed the link on the roasted beets. Funny enough, a few days ago when I stuffed myself with marinated beets from my father (his mother's recipe), I was also enjoying a big slice of dark rye bread with butter, goat cheese and walnuts. I wasn't even trying to go for a cliché combo but it turned out to be what I had in an almost empty fridge. It was so good. I will try that "roasted in salt" method.
